Veggie Fajitas

Recipes are not only a means of boring instructions, but a fun way to experiment with flavours, textures and smells. A bit like a science laboratory without the chemicals and toxic smells. This week, our Chief Operating Officer, Ann, is sharing her veggie fajita recipe with you.

Perfect for a fun dinner night theme with friends or a fail-safe, family-pleasing quick school-night fallback.

Prep time: 5 minutes

Cooking time: 15 minutes

Difficulty level: Beginner

Serves: 2 people


Method:

  1. Heat a tablespoon of oil in a frying pan, and when hot add the cut pepper strips and stir around.

  2. Add a splash (about 1/6 of a cup) of water and cover the pan (I use a pizza tray, but aluminium foil or baking parchment also works).

  3. Cook for 4-5 minutes until soft and glossy.

  4. While it’s cooking, peel and de-seed the avocado, and crush with a fork. You can add a little lemon or lime juice and a sprinkle of chilli seeds if you want to.

  5. On a wholemeal tortilla wrap, put a large cooking spoon full of the cooked peppers, a dollop of crushed avocado, a smear of sour cream (or plain yoghurt) and a sprinkle of grated cheese.

  6. You can wrap, roll, fold it and enjoy it. A zingy side salad also pairs wonderfully with this dinner idea.

Ingredients:

4 wholemeal tortilla wraps

For the filling:

  • 4-5 peppers, cut into narrow strips

  • 1 tbsp oil

  • 1 large avocado

  • Sour cream or plain yoghurt

  • Grated cheese
